The canning season usually starts towards the end of the summer and into the fall when the leaves begin to change color and the vegetables are at their ripest. Just about anything you can think of can be canned and preserved for later consumption which is a great way to save money in the long run and be prepared if there where any type of shortage of food. If you've never canned before, don't worry, this article will give you the basic guidelines for the canning process and by the time you read it, you'll be ready to start canning.

What types of foods can be canned? Well for the most part any vegetable or fruit you can think of can be canned in some for or fashion. It just takes a little be it of time and dedication. The canning process is pretty simple and easy to follow. Before you start canning you'll need to fill your canner about half full with water and heat it up to 140 degrees or so for raw packed foods and 180 degrees for hot packed foods. The you can gather up your canning jars and prepare the lids and seals, prepare the food item that you want to can, whether that means pealing and chopping up apples, or pears, or tomatoes, or any other item. When you have the food prepared for the canning process, you may begin filling the canning jars while you are heating up the water.

When all jars have been prepared, begin placing the jars into the canner. Be sure that you don't tip the jars and they remain vertically upright at all times. Tipping the jars may cause the food to run into the seal of the jar which would prevent it from sealing properly. The water level should remain 1 to 2 inches over the top of the canning jar lids when the jars are in the canner so if you need to add more boiling water you may do so. Once the canning jars have been place in the canner, you'll want to boil the water for the recommended amount of time based on the food item that you are canning. If the water stops boiling at any time, turn the heat to the highest setting and bring back to a rapid boil and then boil for the recommended amount again from the beginning.

When the jars have been in the boiling water for the recommend amount of time, turn the heat off and remove the lid of your canning pot. Let it stand for 5 minutes or so and then remove the jars from the canner, placing them on a towel or drying rack to cool. Do not push on the lids or attempt to tighten them as the will break any seal that has taken place. If any did not seal properly, then use those jars first.

Now that you have a general idea of how the canning process works, I hope that you'll be able to enjoy canning your own fruits, vegetables, meats, or whatever it is that you wish to preserver for future use.
